This week was a total whirlwind! Phew! And can you believe it is already APRIL?! I certainly can’t. I graduate college next month! That’s pretty insane.

This weekend’s agenda includes spending time with some friends (I’m crossing my fingers for some yummy brunch!), CLEANING, laundry, some fun workouts, and relaxing. I think the general theme of most of my weekend plans is always relaxation, and that’s not a bad thing at all. 😉

Easy Baked Chicken Recipe

The other day I made some baked chicken with a little bit of a twist. Have you ever heard of ghee? It is a clarified butter, means the dairy has been removed. I’m not avoiding dairy, I just like trying new things! Chicken breast can tend to be kind of dry because there is hardly any fat in it. So, by adding back in some good fat, the chicken will come out a lot more moist (and tasty)! The “recipe” below utilizes this technique, and is super simple. I like to use chicken breast strips, but any form of chicken breast would work. (For thicker pieces, adjust the cooking time.)


I paired this chicken with some brown & wild rice, and some carrots. It was an easy weeknight meal!

Friday Favorites

  • Friday Night Lights: Jake and I started watching this show on Netflix a few months ago, took a break, and decided to continue watching it recently. I’m such a sucker for a good drama. It’s totally male-approved too (hello, football scenes), so you can watch it with your guy!

  • Iced Chai Latte: These are such a treat for me, and I enjoyed one this week. It’s rare that I buy a drink from Starbucks (almost $4 for ONE drink…no thanks). I actually got this one as a study treat before a long evening of studying, and it definitely hit the spot! They also don’t seem to have any really wacky, fake-food ingredients, if that’s something you look for.image
  • Multitasking Workout: I had a big test this week, so it seems like my life semi-revolved around studying the past few days. So, to get some movement in I grabbed my notes and hopped on the treadmill. I walked at an incline (can’t remember exactly what incline, somewhere in the middle of the range) while I read through my notes, and then finished off with some running. I don’t think I’ve ever had 50-ish minutes go by fast on a treadmill like they did during that workout! If you aren’t in school/work/have something you need to get done, reading a magazine would probably do the same trick! (Yes, I do realize this is probably common sense to most people…if you’re living under a rock or ever feel uninspired like I do, this blog is for you!)
  • Style Me Pretty: If you’ve never looked at this website, you seriously need to. It is a website that posts real weddings that are soooooo pretty. It’s a fun place to get inspiration for your own wedding, or just to swoon over beautiful photos. If you want to get lost in a bajillion pretty flowers, dresses, rings, etc.,  you must check out Style Me Pretty.
