2017 Friday Favorites

Hi guyyyyyys! I so CAN believe it’s Friday. This week was a long one for me, but I’m so excited for a relaxing weekend ahead. I LOVE my weekend routine, and crave the activities I do each weekend. (Target, iced coffee, church, etc… all fun things.)

Do you love weekends as much as I do? Sometimes I wonder if other people obsess over weekends like me. I assume they do, but man, I just REALLY LOVE them.

I have a test on Monday, so unfortunately some of my weekend will be consumed by that, but I might park myself at a coffee shop while I study to make it a little better. Studying + coffee = slightly less painful.

Jake is currently at the movies with his brother, and I totally skipped out so I could enjoy laying in bed for a few extra hours. Granny status currently? V high. I’m not mad though. I’ll take all the ‘laxin I can get.

I have a few favorites to share with you this week, so keep reading to learn what I’ve been loving this week!

FRIDAY FAVORITES

1 | Mini Meal Prep

This week I prepped brown rice, sweet potatoes, and hard boiled eggs. It was so helpful for breakfasts/snacks/lunches/dinners this week because let’s be real, when life get’s busy and hectic, the last thing I want to do is spend time cooking real foods to put together a decent meal. To give some examples of what I used the prepped food for: hard boiled eggs as breakfast to-go, rice + sweet potatoes + black beans + salsa + chili powder as a burrito bowl for lunch, rice in tacos for dinner, sweet potatoes for a snack, etc. I will definitely prep some food this week, too! I should prep more, but baby steps, right?

2 | Gold Scalloped Flats

I actually bought these shoes as potential wedding shoes, but don’t think I will wear them for that. (But who knows!) I wore them today and just think they are the cutest thing. I struggle to find stylish shoes that aren’t boots or sandals, so these fit the bill perfectly! You can find them at Target by following this link.

3 | Aldi Simply Nature Organic Peanut Butter pb.jpg

My favorite PB always contains only peanuts + salt. I just prefer a less-sweet tasting nut butter. (Plus the added sugar + oil isn’t really necessary.) I picked up this organic peanut butter from Aldi a few weeks ago and have been loving it! I like that it is organic and also affordable. I think it was $3.99. Have you guys noticed that nut butters are basically the price of gold?! I’m clearly in the wrong industry… Anyway, if you’re looking for a decently priced peanut butter with good ingredients, check out Aldi!

4 | The Leftovers

So Jake and I started watching a new series (shocker, I know) on HBO Go, and we’re HOOKED. It’s a mysterious show with a lot of secrets, so it keeps you coming back for more. The premise (without giving too much away) is that 100-something million people mysteriously disappeared from all around the world, and we are seeing the aftermath/the struggles of the people “leftover”. I would definitely recommend checking it out!


 

I hope you have a really amazing weekend! Whatever you do, make sure you set aside some time to do something you love. Self-care is so important!

Friday Favorites #46

2017 Friday Favorites

Hey guys! I hope you had a good week. I for one am very excited for a weekend with no major plans. I love the openness with room for fun and for relaxation. I do have some errands to run (grocery shopping, license renewal) that I think I will knock out in the morning. Don’t you just love feeling super productive in the am? I’m a morning person through and through. Good thing I’m marrying one, too. 😉

Do you guys participate in Lent? I typically don’t, but for some reason, kind of last minute, I decided to give up sweets/dessert this year. So until Easter I will not be eating any sweets! I’m looking forward to this challenge, and hope I feel a little lighter and healthier as a result!

Now onto the real reason for this post: to share my weekly favorite things!

Friday Favorites

1 | Easy Greek Turkey Burgers

I made some really easy turkey burgers this week based on and inspired by a recipe from a cookbook I reviewed a while back, Run Fast Eat Slow. They are so good! All I do is mix together a pound of lean ground turkey, 1 egg, and 1 package (I think 1 cup) of seasoned feta cheese (try garlic + herb). Then just form patties and cook them on a skillet until thoroughly cooked.  Seriously, so simple and so good. Plus, they reheat well. I like them in a pita pocket with smashed avocado.

2 | Kate Spade Lemon Apron

OMG I never knew you could fall in love with an apron… until now. I found the CUTEST Kate Spade apron at TJ Maxx and just had to show you. I found it on the Kate Spade website, too, but for twice the price! So if you can stalk TJ Maxx instead, that would be your best bet. I’m so excited to wear this and feel like a domestic goddess. (Because trust me, I’ll need all the help I can get in that department. LOL) Also, now I totally want the matching hand towel and oven mitt and recipe book. Too far?

3 | Making Instagram Stories

I think it is so fun to make cute Instagram stories! From making a funny boomerang, to writing in pretty font, I just thought it deserved a mention on my Friday Favorites post. I also love watching them, too, especially when it comes to my fave bloggers! (I talked about that in a post a while back.)

4 | Yogurt and Granola

I know this is a tried-and-true combo, but I have been re-loving it this week. I think I’ve mentioned this before, but I go through spurts of forgetting that certain foods exist, so this is a reminder for people like me! I love using Greek yogurt because it’s protein-filled and thick and creamy, and granola adds the perfect crunchy element. If you need a new snack or breakfast idea or are in a rut, give a little homemade parfait a try!


 

Now I need to write a grocery list so I can go to the store first thing tomorrow after my workout! Have a great weekend!

Friday Favorites #45

2017 Friday Favorites

Hey guuuuys! Happy weekend!

The short school week is done, and I’m anxiously awaiting the arrival of my parents and sister who are visiting for the weekend! Hooray!

We don’t have too many plans in place just yet, but I know whatever we do will be fun and relaxing. Have I ever mentioned how much I love weekends?

Okay, I’m going to share some faves with you now. Keep reading to learn what I was loving this week!

FRIDAY FAVORITES

1 | Mrs. Meyer’s Clean Day Lavender Room Freshener

I picked this up at Target recently and have been enjoying spritzing it around my room from time to time. It has a unique scent, and overall makes my space feel fresher. I also like that it’s a little more natural of a product.

2 | WINNING a Giveaway

Okay this couldn’t not be a favorite this week. Our wedding photographer Erin Stubblefield (who shot our lovely engagement pics, too) ran a few wedding-related giveaways on her Instagram this week, and I actually won! I won an engagement-themed box, the Mrs. Gift Box from MrsShoppe on Etsy. I’m beyond excited to receive it in the mail! Thanks again, Erin!

3 | Trader Joe’s Frozen Brown Rice

I’ve had a stockpile of this stuff in my freezer for months because it’s just that good. It’s sticky in a good way, and heats up in a jiffy. I’m kind of obsessed with rice in general. It’s filling, serves as a nice side/base of meals (just add protein + veggies + seasoning), and is neutral enough to go with like, everything. If you have a TJ’s near you, make sure to pick this up on  your next trip.

4 | Get Out Movie

Jake and I saw this movie with another couple with week, and it was SO GOOD. It was the perfect blend of creepy & twisted, funny, suspenseful, unique, etc. I would totes recommend you see this. Plus, we accidentally had to see this movie in a super fancy dinner theatre. We felt so fancy. (This was also the time I decided we need to get out more, as I was so blown away by a nice movie theatre. LOL)


 

I’m currently watching Hunger Games with my roomie/bff, so I better get off here. My parents (slowest drivers in all the land) should actually be here soon, too. Have a great weekend!!

PB Chocolate Chip Muffins

Happy almost-middle-of-the-week! I had a wonderful, long, extremely fun and relaxing weekend. I fully enjoyed the beautiful weather and it actually felt like a long weekend (in the best way possible).

I am getting ready to dive into the books I’m currently reading (Grace Not Perfection by Emily Ley and The 5 Love Languages by Gary Chapman), but first, I need to share an easy-peasy, healthy muffin recipe with you.

I’m not gonna lie…these are not gourmet, super sweet, bakery-style muffins. These are healthy, idiot-proof, and pretty tasty. I just thought I should give this warning, as these are not a dessert-y muffin, so I didn’t want you to be disappointed if you were expecting dessert for breakfast! This is a definite breakfast muffin that is very low in sugar and doesn’t contain artificial sweeteners to make it fake-sweeter. (Fun fact: I can’t stand artificial sweetener… I don’t know how people get over the aftertaste!)

If you are looking for something sweeter, simply add more chocolate chips or maple syrup, or another sweetener you like!

Having muffins made each week has been a game-changer in the breakfast department. My busy schedule + muffins sitting for me in the kitchen = a happy 7 am Caitlin.

INGREDIENTS:

  • 1 cup almond flour
  • 1 cup whole wheat flour
  • 1 t baking soda
  • 1/2 t sea salt
  • 1 1/2 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 2 large eggs
  • 4 T peanut butter
  • 2 T chocolate chips

DIRECTIONS:

Preheat oven to 350 degrees. Combine dry ingredients. Combine wet ingredients. Combine dry and wet ingredients until batter is moist. Don’t over-mix! Pour into lined or greased muffin tin and bake for 30 minutes or until light golden brown. Let cool and eat in 0.25 seconds!

Protein: 5 g
